Taco Cheesecake Recipe

Ready for a new treat to make for your next party. Everyone likes cheesecake and Mexican food. Why not add the two types of treats and make a Mexican cheesecake? Because so many people bring desserts to parties, why not take a savory cheesecake. Everyone will think you spent hours baking this treat because it is so great. It will be our secret that it the taco cheesecake recipe is really very easy. I won't tell if you don't.
Always make this appetizer the day before you need to serve it. Cheesecake always needs to cool overnight to be at its best. The first step is to sprinkle the bottom of a nine inch spring form pan with a few teaspoons of cornmeal. Then it's time for the cheesecake mixture. Be sure to put the cream cheese out at least an hour before you are ready to mix the cheesecake. Mix three eight ounce packages softened cream cheese until it is smooth and creamy. You should use a hand mixture or stand mixture because you cannot beat cream cheese by hand. Add a package of taco seasoning. If you want the cheese cake to be extra hot, use a hot taco seasoning or add some chili powder. Blend until smooth.
Add one half cup sour cream and one half cup salsa, again hot or mild. Beat until smooth. Stir in two lightly beaten eggs, one cup Mexican cheese mix, and 1 four ounce can chopped green chilies that have been drained. Mix until smooth. Fold in one half cup chopped ripe black olives. Pour the mixture over the cornmeal. Place the spring form pan on a baking sheet. Bake at 350 degrees for thirty minutes. Jiggle the cheesecake to see if the middle is almost set. If it isn't, put back in the oven for five minutes or until center is set. Place the pan on a wire rack and cool for at least fifteen minutes. Run a sharp knife around the edge of the spring form pan to loosen the cheesecake. Cool for another hour and then refrigerate.
Take the side of the spring form pan off when the cheesecake is completely cooled. Spread one cup of sour cream on the top of the cheesecake and then the sides. The sour cream will cover any cracks that might have occurred on the top. It covers a multitude of sins. Now the fun begins. You get to decorate your prized cheesecake.
The topping consists of one fourth cup sliced black olives, sliced green chilies, sliced cherry tomatoes and one jalapeno pepper that has been sliced. Be careful cutting the pepper. Use some kind of protection or you may have a burning sensation in your hand and that's no fun. Arrange your toppings in any way that pleases you. You are the artist.
You can serve the cheesecake with an assortment of crackers or some very good bakery bread. Chips are also an option. Use a cheese server to help your guests help themselves.
