Sopapilla Cheesecake Recipe

Talk about baking outside the box. This sopapilla cheesecake recipe is certainly not your typical cheesecake. Although some people wouldn't even consider this a cheesecake, what do they know? Tell the cheesecake police that you can make whatever you want. Anyone who has ever had the traditional sopapilla dessert will be eager to try this wonderfully different cheesecake.
A sopapilla cheesecake recipe is the perfect accompaniment to any meal and especially a Mexican meal. The first step, of course, is the crust. Line the bottom of a nine by thirteen casserole dish with one pop top can of croissants. Before placing the croissants on the bottom of the pan, close the cuts made into the dough. Then stretch the dough into the pan and press. This process may take a little time but you should be very careful to close the bottom.
Before you make the cheesecake mixture, make sure that the cream cheese is softened or mixing will be very difficult. Using a hand mixer or a stand mixer beat the cream cheese until it is smooth and fluffy. Add one and one half cups of sugar to the cream cheese and blend until smooth. Add one teaspoon vanilla and mix until it is completely incorporated.
When the cheesecake mixture is finished, pour it over the croissant crust. Make sure that it covers the entire crust. You may have to use your hands a little here. That is part of the fun.
Open the other croissant can and work with it like you did the crust. Close the scored places and stretch the croissants until they cover the cheesecake mixture. Pour one half cup melted butter on top of the top crust. Then sprinkle with a mixture of two teaspoon really good cinnamon and one half cup sugar.
Pop the sopapilla cheesecake into a pre-heated 350 degree oven and cook for thirty minutes or until the cheesecake is nicely browned on top.
You can serve this cheesecake by simply slicing it into squares while it is still warm or you can add some lovely vanilla ice cream on the side. Either way the sopapilla cheesecake will be a hit at any party. Be ready for plenty of recipe requests.
