Now days everyone is in a hurry. We don't have time to do any of the things we really enjoy because we spend all of our time working or resting from work. To say that most people don't have time to cook is not overstating the problem. That's why every grocery store offers cooked food and bakery foods. People can just go into the store and buy dinner and dessert or go to the restaurant of choice. For the people who still like to bake but never have the time a really good no bake cheesecake recipe is the perfect solution to the problem. A no bake cheesecake is ready to eat about an hour after making because it is no bake. Hence no heat. What a great idea.
If you are a cheesecake purist and have never even tried a no bake cheesecake recipe, you are in for a real treat. This recipe is not the no bake cheesecake mix you can buy at the grocery store. This is a real winner especially if you like peanuts or peanut butter. If you are allergic, you can stop reading now.
The crust is very simple and not your everyday graham cracker crust. In a medium size bowl, add one fourth cup chopped peanuts, one cup graham cracker crumbs, and one third cup melted butter. Mix until smooth. Add to a greased nine inch spring form pan. Press to make a crust. The added peanuts add another layer of flavor to the typical graham cracker crust. The crust does not have to be perfect. If you can, press your mixture up the side of the pan. Put the pan in the refrigerator to cool,
The filling is very simple and has only a few ingredients. There are no eggs because it is a no bake cheesecake recipe. Eggs should be cooked so you will almost never find them in a no bake cheesecake recipe. In a large mixing bowl, add twelve ounces of softened cream cheese and two thirds cup creamy peanut butter. Beat with a mixer on the medium setting until the mixture is creamy. Slowly add the sweetened condensed milk and mix until incorporated. Do not substitute any milk for sweetened condensed milk or your cheesecake will be a disaster. Nothing else will do.
Add one teaspoon vanilla and beat until incorporated. Add one third cup fresh lemon juice and mix. Be sure to use fresh lemon juice because it will make your cheesecake very fresh. By hand fold in one and three fourth cup whipped topping. Use the bought whipped topping; it's great. Be sure to thaw the whipped topping before using it. Pour this mixture into the cooled crust. Chill for at least two hours; three is probably better.
You can garnish the cheesecake in any way you want. You can add some peanuts on the top of the cheesecake. If you want to get really fun, you can garnish with some miniature Reese's cups or Reese's pieces. Another great garnish is whipped topping. Whatever you use as garnish, this no bake recipe is certainly a crowd pleaser.
